- 1.5 pounds (700g) beef tripe (cleaned and cut into strips)

- 2 tablespoons olive oil
- 2 carrots (diced)
- 2 celery stalks (diced)
- 1 can (14 oz/400g) chopped tomatoes
- 1 cup beef or vegetable broth
- 1/2 cup dry white wine
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Grated Parmesan cheese (for serving)
- Chopped fresh parsley (for garnish)
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until they become translucent and fragrant.
- Add the diced carrots and celery to the pot and cook for a few minutes until they begin to soften.
- Add the beef tripe to the pot and stir well to combine it with the vegetables. Cook for a few minutes to lightly brown the tripe.
- Pour in the white wine and let it simmer for a couple of minutes to reduce slightly.
